LOL,  I happen to be a canning instructor (the water bath for jams and fruits, pressure canning for veggies and meats.) 

the problem with home grown chickens is most of them were not bred for meatiness,  they are scrawny egg layers...  their job is to lay eggs, not be eaten.  to get around that you have to cook them in a pressure cooker, then they will be tender enough to eat.  that is what our Grandmas and Moms did to make tough meat edible.  enjoyed all you farmers sharing, i am a farmer's wife at heart.   hugs from jj/sheila

Aaah yes, the 'pressure cooker' ... the pot with the locking top and the little round metal thingy that started dancing around when things started boiling inside ... I'm here to tell you, that is the ONE pot that Mama didn't have to tell me twice, to leave alone ... she said it built up steam like an old steam Locomotive ... (I was ALWAYS afraid that thing was going to explode) ... and it helped cook things faster and to help canning veggies ...

Oh, and the chickens off organic farms don't have all the hormones(steroids) that are fed on the mass produced chicken farms ... our beef has a lot of hormones added too ... consider this ... in the 50's girls did't start getting boobs til 15 or 16 years old ... Today ??? ... they have big boobs at 13 ... Hey ... ... ... I'm a guy, I notice these things ... I figure it's all the hormones for super fast growth in the food we eat ... what else could it be ??? .... I'm tellin' ya, things are a lot different today ... (okay, okay, about all I can do is observe) ...
